Buttermilk pancakes


Do not over mix batter, it should be lumpy (grumos)

Overmixing causes pancakes to be tough

1 c flour makes enough pancakes for 2 (about 12)

Sift (tamizar) together:

1 cup cake flour (or all purpose flour)

1 tsp sugar

½ tsp salt

1 tsp baking powder

½ tsp baking soda

Beat until light

1 egg


Add to egg and blend

1 ½ cups of buttermilk (or yogurt or sour milk)

2 tbsp melted butter

Blend all ingredients together with a a few firm stroke. If too thin, add another tbsp of flour

Lightly grease griddle and heat to medium. Drop batter to gridle (approximately 2 heaping tbsp of batter per pancake). Cook over medium until bubbles appear all over the top. Flip pancake and cook 2 another minutes (or until the cake feel SOFT to the touch)
